Description

Tender bell peppers stuffed with a vibrant antipasti mixture and air fried until warm and slightly golden.


Ingredients

  • 4 large bell peppers, halved and seeded
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1 cup artichoke hearts, chopped
  • 1 cup mozzarella, cubed
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Preheat air fryer to 180 degrees Celsius.
  2. Mix cherry tomatoes, olives, artichokes, mozzarella, olive oil, Italian seasoning, salt, black pepper, and basil.
  3. Place halved peppers cut side up in air fryer basket.
  4. Fill peppers evenly with mixture.
  5. Air fry 10 to 12 minutes until tender and cheese melts.
  6. Cool slightly before serving.
