Tender bell peppers stuffed with a vibrant antipasti mixture and air fried until warm and slightly golden.
Ingredients

- 4 large bell peppers, halved and seeded
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1 cup artichoke hearts, chopped
- 1 cup mozzarella, cubed
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh basil, chopped
Instructions
- Preheat air fryer to 180 degrees Celsius.
- Mix cherry tomatoes, olives, artichokes, mozzarella, olive oil, Italian seasoning, salt, black pepper, and basil.
- Place halved peppers cut side up in air fryer basket.
- Fill peppers evenly with mixture.
- Air fry 10 to 12 minutes until tender and cheese melts.
- Cool slightly before serving.

- Pat vegetables dry before mixing.
- Cook in single layer for even roasting.
