- In a heavy-bottomed saucepan over medium heat, melt the butter, then stir in the sugar and salt until combined.
- Continue to cook, stirring gently and steadily, as the mixture bubbles and thickens.
- Clip on the thermometer and cook until the mixture reaches 300°F, the hard crack stage.
- When the toffee turns deep golden and smells fragrant, remove the pan from heat immediately.
- Pour the hot toffee onto the prepared baking sheet and spread quickly into an even layer.
- Let cool completely, then break into pieces and serve or store.

- Note: Use a heavy-bottomed pan to promote even heating and prevent scorching.
- Keep heat at a steady medium to avoid separating the butter and sugar.
- Do not walk away, the sugar can burn quickly near the end of cooking.
